Quiche part II

  • Pepperoni Quiche

    I wing this whole thing except for the egg mixture so here goes.......I get the basics from Julia Childs then added the other ingredients from a non-Atkins quiche...minus the flour.

    3 large eggs and enough cream (use light or heavy which ever suits your fancy) to make 1 1/2 cups. Blend together.

    1 to 1 1/2 cups muenster cheese shredded (use your judgement)
    Handful of pepperoni and chop it up....seriously....just eye ball it. I think I use about a 1/2 cup unchopped.

    Salt, and pepper
    tsp or so of Oregano.

    Mix all together and place in individual ramikins. Sprinkle a little extra muenster on the top. Place the ramikins in a 9x12 baking dish filled half way with hot water. I bake them for about 20-30 minutes or until puffed up and nicely golden. They will fall back down when cooled.

    I promise to get the exact or as close to exact as I get recipe tonight when I get home Really though you can't mess this up.
