I heard everyone talking about the spinach muffin cups...but, I thought I would try and create my own phase 1 ones.. I put 10oz pkg spinach in a bowl, mixed it with 8 oz ( 1 cup eggs) or egg substitute..a 6-oz can of crab meat ( drained) and a couple diced black olives...I lined 12 muffin cups sprayed with cooking spray and filled each one..I then put a little FF mozz cheese on each one and baked at 350 degrees for 30 minutes...I must admit, they tasted pretty good..so, I wanted to share...I think I stayed within all limits of phase 1 too! please tell me if I didnt anywho, love this board! Shari, Thanks for the muffin recipe. I love the idea of adding crabmeat. That will help to make it feel special, like on the weekends.
