Sausage Balls (Breakfast / Appetizer)
I love sausage balls for breakfast or as appetizers during the holidays or anytime in cold weather. I ran the ingredients through FitDay: .6 carbs per sausage ball.
*Not for Induction. Almond flour/meal is not on the Induction foods list. Here's my recipe for them using almond flour/meal: Makes 2 1/2 dozen 1/2 lb. fresh pork sausage (I use Jimmy Dean's Original) (not pre-sliced) 5 oz. sharp cheddar cheese, grated 1 - 2 T. water 1 c. almond flour/meal 1/4 tsp. baking powder dash of red pepper Mix sausage, cheese, and water thoroughly. Using clean hands is best. Sprinkle the almond flour/meal, baking powder, and dash of red pepper over the mixture. Mix again thoroughly. Shape into 1" balls and placed on foil-lined cookie sheet sprayed with non-stick. Bake at 350 degrees approximately 20 - 25 minutes til they just begin to brown a little. Serve warm, refrigerate or freeze. You can pop them in the microwave for a delicious treat. |
My FIL serves something similar to these with a mustard/mayo dip...1 tbsp coarse mustard to 1/2 cup mayo.

These sound really nice.
Will definetly be on the menu after induction! Probably also a good thing for adding to work lunches, I think . |
