You can adjust this to make it more or less savory for your taste, this is the method I like:
2 large eggs
1/4 cup water
1/4 tsp. celery salt
1 tsp. Italian seasoning or Oregano
1/2 cup shredded mozzarella
Beat the eggs and water together for about a minute, stir in the celery salt and the seasoning. Pour into a preheated skillet on medium. Cook until 3/4 done and sprinkle on mozzarella. Fold into thirds, flip once, cook for about a minute. Makes a delicious breakfast!
