I thought we could give cheese some thought this week - how do you use cheese to make your WOE better and do you have any cheese recipes?

Been gone, but here's a couple suggestions:'

CREAM CHEESE-CRAB DIP
1/4 c. heavy cream
8 oz. cream cheese
1/2 c. mayonnaise
1/4 c. chopped green onion
2 t. horseradish
5 drops Tabasco sauce
1 dash Worcestershire sauce
7 oz. crabmeat

Stir cream into softened cream cheese. Mix in mayonnaise, onions, horseradish, Tabasco and Worcestershire sauce. Stir in crabmeat and sprinkle with paprika if desired. Cover and chill at least an hour.

FESTIVE CHEESE BALL
2-8 oz. pkgs. softened cream cheese
1 bunch thinly sliced green onions
1/3 c. chopped green stuffed olives
2 pkgs. thinly slice corn beef or smoked ham
1/4 t. garlic salt
1 T. Worcestershire sauce

Chop meat finely. Mix all ingredients well. Shape in a ball and place on a serving platter. Cover with plastic wrap and chill, letting flavors blend. Serve with assorted veggies. Variation: add some toasted pecans.

CHEESE AND ASPARAGUS QUICHE
1/2 c. Swiss cheese
1/2 c. shredded cheddar cheese
1 c. chopped asparagus
1/4 c. chopped leeks
1/2 c. sliced mushrooms
12 eggs
1/2 c. water
1 1/2 c. heavy cream
1/4 t. nutmeg
1/2 t. pepper

Spread cheeses on bottom of buttered 10” x 12” pan and top with vegetables. Whisk eggs, water, cream, nutmeg and pepper. Pour over cheese and vegetables. Bake at 375º 45 minutes or until knife inserted in center comes out clean. Serves 12. 3 gm carbs/serving, 1 gm fiber/ serving

And last, but not least for the sweet tooth:

NO-BAKE CHEESECAKE
12 oz. softened cream cheese
1 t. vanilla
3 pkts. sweetener
1 c. heavy cream

Beat cream cheese, vanilla, and sweetener until smooth. In separate bowl, beat cream until it begins to form soft peaks. Add whipped cream to the cream cheese mixture and beat until smooth. Chill 20-25 minutes.

CHEESECAKE
3-8oz. pkgs. softened cream cheese
4 eggs
24 pkgs. sweetener
2 t. vanilla

Beat all ingredients until fluffy. Pour in 9” springform pan. Bake 325 for about 40 minutes.
