I think that these muffins would be acceptable as a high fiber item in place of a slice of bread.

Oat Bran Muffins

9 oz. oat bran
1/4 cup whole wheat flour
1/4 cup sweet and low brown sugar substitute. (You Gals from Canada can use Sugar Twin sodium cyclamate) That is what I use.
2 tsp baking powder

Add in the order given
1 cup skim milk
2 egg whites, slightly beaten
1 TBS honey (On the Phase 2 list as an eat rarely)
2 TBS vegetable oil.

Mix until just moistened.

You can add any one of the following:
1 cup blueberries
1/2 cup unsweetend apple sauce
1 chopped apple
1 mashed banana
1/4 cup raisins.

Pour into 12 muffin cups which have been sprayed with non-stick spray. That works better that the paper liners.
Bake at 425deg. for 15 to 17 minutes. When I use the apple, I add some cinnamon.

I know the banana and raisins are not on our preferred fruit list, but just added them since maybe some family member might like them.

Since this is basically all fiber, it seemed to me that they would be acceptable. If you don't agree, then delete them from the recipe file. Ann
