Default Catalina Dressing

I was looking for a SB friendly substitute for Catalina Dressing. Sarahyu was nice enough to track down a recipe of the real version for me. Here's how I made it more SB friendly. I believe that this qualifies for phase 1, but the Taco Salad that I use it on is phase 2.

Catalina Dressing

1/4 cup low carb ketchup
1/4 cup Splenda
1/4 cup red wine vinegar
1 1/2 tablespoons grated onion*
1/2 teaspoon paprika
1/2 teaspoon Worcestershire sauce
1/4 cup canola oil**
Salt and Pepper

Combine ketchup, Splenda, vinegar, onion, paprika and Worcestershire in a bowl. Whisk in canola oil. Add salt and pepper to taste.
* I reduced the amount of grated onion quite a bit from the original recipe. I found it pretty overpowering.
** I tasted the dressing before I added the oil, and it was pretty good on it's own. You may want to reduce the amount of oil or even leave it out altogether.

This makes 1 cup total. 8 servings (2 tablespoons per serving)

65 calories, 7 grams fat, 1 carb, 0 cholesterol, 91 mg sodium
