Italian Hot Cocoa
 
Italian Hot Cocoa :chockiss:

1/2 cup unsweetened cocoa powder
1/3 cup Splenda
1 teaspoon cornstarch or arrowroot
1 cup water
1 cup milk
1/8 teaspoon vanilla extract

Ground nutmeg or cinnamon, optional

In a medium, heavy saucepan, stir together the unsweetened cocoa, splenda and cornstarch (or arrowroot.) Thoroughly stir in 1/2 cup of the water and set (heat) over low heat. Stir in the remaining 1/2 cup water and the milk. Cook, stirring, over medium-low heat until the mixture is thick enough to coat a spoon, about 10 minutes. (If using skim milk this may not be as thick, so use less water.)

Stir in the vanilla. If desired, top each serving with ground nutmeg or cinnamon.

Serves/Makes: 2-3 servings

When I made this I didn't have any milk so I used the powdered kind. Also, I halved the recipe and it turned out fine. As a matter of fact, better than fine. Very chocolate-y and yummy!

Thanks for this, I really crave hot chocolate but with the SBD I thought that I have to go without it forever... I'll try this... Thanks again.

(I'm just on my 4th day of SBD, with this recipe, I know i'll stick with this)

Great recipe, Broad!

Actually, I find this easier to do with the microwave. Here's how I do it:

Set 1 cup of skim milk and 1/2 cup 1% milk in a microwaveable container (I use Pyrex liquid measure cups) and microwave for approximately 2 mins. 45 secs (for a powerful micro) on high. While it's cooking, mix 1 Tablespoon and 2 tsp. of unsweetened cocoa with 3 T of flavored SF syrup (I think Toasted Marshmallow and Kahlua are the best!) or sweetener in a mug until smooth without lumps. When the milk is fully heated, pour it into the mug slowly, stirring the whole time. When blended, you can add a tiny amount of vanilla extract, if you wish. You can also add a pinch of salt with the sweetener. The stirring gives it a frothy top, and the flavoring makes it very exotic and super yummy! :T
