I'm on day 2 and have been experimenting with some sauces/dressings I used to eat on my low-carb regim. The first hasn't even had to be modified and the second has only low-fat feta replaced for regular feta. Both have a lot of flavor to them, so if you don't like such zippy sauces, beware!
Warm Vinigrette Sauce
1/4 cup olive oil
2 tbsp balsamic vinigar
1 tsp dijon mustard
salt and pepper to taste
3/4 tsp loose splenda (I use 1 as I like it sweet)
1 green onion stalk, chopped
Heat all ingredients in a saucepan. Pour over chicken, turkey, or meat.
this makes a very flavorful sauce for plain meat. Since I like my meat drowning in sauce, I use the whole batch but it can easily stretch to 2 servings. The original recipe had this over green beans so you can use it for veggies too.
Balsamic Feta Vinigrette Dressing
4 tbsp olive oil
2 tbsp balsamic vinigar (can you tell I love balsamic
)
1 tsp dijon mustard
salt and pepper to taste
1/3 cup crumbled low-fat feta cheese
2-3 cloves of garlic, minced or mashed (use less if you're not a garlic fan)
Combine olive oil, vinigar, mustard, salt, adn pepper. Mix well. Add crumbled feta and garlic. Mix well.
Again, I like a lot of flavor for my salads so I use the whole batch for one big salad but it coudl easily stretch for two.
