I hate eggs! Luckily, I LOVE sharp cheddar cheese. When I started MRC, I figured I would be so sick of just eating cheese for breakfast every day, but I still love it just as much.. actually I look forward to that meal. I usually eat cheese toast, or just plain cheese and a piece of bread, I'll also make a quesadilla or just eat my tortilla on the side. I'll sometimes make oatmeal, and I'm wondering how it would taste with some cottage cheese stirred in.. anybody tried that? I've tried cottage cheese by itself and I just can't do that...

I thought I hated cottage cheese until I mixed in a vanilla pudding HNS! I don't even mind the lumps. Makes it interesting. My biggest challenge with that particular breakfast, though, is remembering to eat a starch with it. The "pudding" is so good and filling that I just forget.

Tomorrow morning I'm going to try the Banana Muffin in the cookbook. I've been missing bananas so I hope the banana extract is a good enough substitute.

Default Cinnamon roll

I've been eating a Cinnamon Roll recipe from my center. Mix 4oz cottage cheese with Vanilla Creme HNS and a little water as needed. Take 1/2 of a Joseph Lavash bread or a piece of low cal bread rolled out thin. Spread the cottage cheese mixture on it and roll it up. Spray with I can't believe it's not butter spray and sprinkle with splenda and/or Cinnamon. Bake for 10-15 minutes at 350. Yummy!

I prefer using the Lavash bread personally. I love that stuff and use it for other things as well.
