Default No Cook Spaghetti Sauce

Ingredients

6 good-sized fresh local tomatoes
2 garlic cloves, chopped
1 tablespoons extra-virgin olive oil
1/3 cup fresh chopped basil
pinch sea salt
Coarsely ground black pepper
Freshly grated Parmesan cheese


Instructions
1. Chop tomatoes and place in a bowl. Add garlic, olive oil, basil, salt and pepper. Toss gently. Cover with plastic wrap and let stand 2 to 4 hours. Toss with spaghetti squash. Serve with Parmesan cheese.

Default Grilled Shrimp w/ Vietnamese Coleslaw

I made the Grilled Shrimp w/ Vietnamese Coleslaw today from the MRC cookbook page 77, it was terrific. I put Mrs. Dash spicy on the shrimp prior to grilling and on the cabbage, it sure was a nice change from the taco salad I have been addicted too.

I LOVE the spaghetti squash!! I never dreamed I would eat SQUASH and like it, it is amazing the things i am eating now!!

Sure,

As per the MRC Cookbook page 77

1 cup cabbage, thinly sliced
1/4 cup cucumber, halved lenghtwise and thinly sliced
1/2 quartered green pepper, thinly sliced
1 Tbsp. green onion, finely chopped
1 Tbsp. chopped fresh mint - (I put dried)
2 pkts. artificial sweetner
1 tsp. lemon juice
pinch of crushed red pepper and sea salt -(I used Mrs.Dash Spicy and no salt)
4 oz. shrimp, peeled and deveined

Combine first 9 ingredients in a large bowl; toss well.
Thread shrimp on skewer -(I skipped this and put directly on my George Forman Grill)
Place kabob on grill, cook on each side until done.
Place coleslaw on a plate and top with shrimp.

Servings: 1
Beginning: Meta Slim Day 11 Meal: Dinner
Meta Slim Plus Day 1 Meal Dinner
Replaces: 4oz protein*, 8 oz raw vegetables
*Meta-Slim Plus menu requires higher protein, adjust accordingly

I noticed the recipe should read; Combine first 8 ingredients not 9 as the shrimp is added to the coleslaw after it is cooked.

One last thing on this recipe I tossed the shrimp in Mrs. Dash spicy before grilling
