oops, the Tortilla Chips recipe should say "1 La Tortilla Factory 50 CALORIE tortilla". And the Tomato salsa and Peach salsa ran together on the recipe, dang! You'll just have to use the second ingredient for the peach recipe, so sorry everyone!

Don't know how many of you use spaghetti squash, but I love it. Made some tonight and had a brainstorm - as always I cut the squash in half (this is much easier to do with a small spaghetti squash - little buggers are tough!), scooped out the seeds, and was about to lay them face down on the baking sheet (lined with aluminum foil, of course). I'd made spaghetti sauce (with ground buffalo) and "real" pasta for my husband. Remembered my rosemary plant growing outside - went out & clipped a few sprigs. Washed it off, put the rosemary in the scooped out areas of both halves, sprinkled a little garlic powder on them both. Baked at 350 for 45 min. The rosemary "infused" into the squash - wasn't overpowering but gave it a nice hint of rosemary flavor. Yummy!

And tomorrow I'll probably use some of the leftover squash to make some "chicken noodle soup" with canned chicken & chicken boullion HNS.

A hint for the taco salad (I make it a lot with ground bison mixed with the reduced sodium taco seasoning) - if you make it at night, you can use the 100-calorie packs of Doritos, just use about half a pack - gives you that Dorito crunch for only 50 calories. Yay!

HOLIDAY PARTY FOODS

These recipes came from a "Maximize your weight loss during the holidays" class. Every recipe is A-OK to bring to a party and stay on plan!

Lemon Cheese Cake Dip
1/2 cup cottage cheese
2 tsp lemon juice
1/4 cup water
1 pack of MRC Lemon Chiffon pudding
3 tsp of Splenda

Blend cottage, lemon juice, splenda and water in blender till completely smooth.

Taco Dip
1/2 cup cottage cheese
2 TBS water
1 TBS low sodium taco seasoning
2 tsp low fat Hidden Valley Ranch dry dip seasoning from packet

Blend in food processor or blender till smooth. Chill for 2 hours before serving.

Cucumber Dill Dip
1/2 cup cottage cheese
2 tsp dried or fresh dill
2 TBS low fat Hidden Valley Ranch dry dip seasoning from packet
4 TBS finely chopped cucumber
1/4 tsp black pepper
1/4 tsp splenda
One dash of Tabasco sauce (optional) adds no heat, just flavor.

Blend in food processor or blender till smooth. Chill for 2 hours before serving.

Chocolate Orange Crunch Delite
Bottom Layer
2 packs MRC double chocolate pudding
2-3 oz water (enough to have consistency of frosting)
Spread in bottom of glass pie dish

Top Layer
2 packs MRC vanilla cream pudding
2-3 oz water (enough to have consistency of frosting)
1 pack orange HNS drink
2 tsp orange zest (remember orange part only)
2 tsp splenda

Spread orange mixture over chocolate mixture and top with 1 packet of MRC Mini Crisps. Chill for 1 or more hours.

Makes 6 creamy servings

Lemon Balls
1 pack MRC Lemon chiffon pudding
enough water for stiff dough
2 tsp lemon zest (remember yello part only)
2 tsp splenda

Roll into 4-5 balls, chill for 2 or more hours. Makes 1 serving

Fireside Coffee
1/2 pack Creamy Hot Cocoa HSN
1/2 pack Cappuccino HSN
2 tsp splenda
1 Mug decaff coffee
dash of nutmeg
1/8 tsp cinnamon
1/2 tsp vanilla extract

Wisk creamy hot cocoa and Cappuccino into hot decaf coffee add splenda and spices. Enjoy!

Pumpkin Spice Latte
1 mug decaf coffee
1/8 cup Vanilla pre-made HSN drink
1/4 tsp pumpkin pis spice
1/2 tsp splenda
1/2 tsp vanilla extract

Mix hot coffee, spices, vanilla and splenda together then add 1/8 Vanilla pre-made HSN drink last. Yum!

Chocolate mint Hot Cocoa
1 pack HSN Creamy Hot Chocolate
1/4 tsp splenda
1/2 vanilla extract
1-2 tiny drops of mint extract (can be very strong if you put too much)

1 pack of MRC cream of chicken soup or 1 pack of MRC chicken bouillon
1 cup water
1 TBSP ICBINB spray
½ tsp Mrs. Dash
½ tsp onion powder
2 oz cooked cauliflower
2 oz sautéed mushrooms and green onions
2 oz sharpe cheddar cheese

Puree packet of soup, water and cauliflower in blender. Sautée mushrooms and green onions in the butter spray. Mix the mushrooms, green onions and cheese in the soup.

Counts as 1 creamy (or 1 clear), 1 protein and 1 veggie

Cool Thick Pudding

I just made the Vanilla Pudding for the first time tonight. I thought it was very thick and I put in 4 oz. of cold water. Does it take away the taste if you add more water? Has anyone had this problem? The flavor tasted fine, but it just seemed more like "paste" than "pudding".

You can add or subtract as much water as you want. Sometimes I make it as a cookie dough batter consistency. Vanilla is really good rolled into balls and then rolled in splenda and cinnamon. But when making the pudding, just start with the 4 ounces and add until you get the consistency you want. It will be just fine. You can put it in the blender with 4 ounces of water and ice, then add a can of diet root beer for a root beer float too - yummy!

Default Ketchup

I'm really having withdrawl from ketchup (Heinz in particular). Does anyone have a good ketchup recipe? I tried the Texas Sauce from the recipe book minus the chili powder - but eeeeeeeooooooo! Yuck!

Originally these said to eat the whole serving, but that is too much oatmeal.
All but the Bruffins: eat half batch.....1/2 protein supplement, 2 oz. protein, bread/starch.

For the Bruffins: eat half batch......1 creamy supplements, 2 oz. protein, and bread/starch.

So remember to add a little more protein and 1/2 a supplement! also, I tried these in the waffle iron and they are great. makes a couple waffles and you can eat them going out the door.

I haven't tried it but I think Walden Farms has a 0 calorie, 0 carb ketchup.
