For the oatmeal, play with the amount of water you use. I like to use just over 3/4 cup of HOT water, nuke on high 1 minute, stir, heat again til it boils (about 20-30 seconds in my microwave), stir again, let sit til it thickens, then add a splash of coffee creamer (I like sugar free flavored coffee mate). If I don't add the creamer, I add a teaspoon or 2 of sugar free pancake syrup.
I ALWAYS cook eggs on the stove. I always add salsa, salt & pepper, and hot sauce, and sometimes some green from my lean & green. Spinach & mushrooms work well. A spray of fake butter helps, too.
