Halibut with Grapefruit Sauce
Halibut with Grapefruit Sauce (from LA Lite Cookbook)
1 P, 2 F
5 or 7 oz Halibut steaks (according to plan)
1/4 teaspoon Morton Lite Salt
Dash of dill weed
1 teaspoon onion flakes
2 tablespoons lemon juice
I Can't Believe It's Not Butter! Spray
Sauce
1 tablespoon cold water
1 teaspoon cornstarch
1 grapefruit, pared and sectioned
1/2 cup Herbox very low sodium chicken broth
Preheat oven to 450 degrees.
Place fish in baking dish. Sprinkle with Morton Lite Salt and dill weed; top with onion flakes. Lightly spray with I Can't Believe It's Not Butter! Spray. Finally, sprinkle lemon juice over fish.
Bake uncovered until fish flakes easily with fork.
Sauce
Bring broth, Morton Lite Salt, and dill weed to a boil. Mix cold water and cornstarch; stir into broth. Bring to a boil, stirring constantly. Carefully stir in grapefruit.
Serve sauce over fish.
