These are really good:

1/4 C Flax Seed Meal ( I use 1/8 of flax and 1/8th of hazelnut flour)
1/2 tsp Baking Powder
1 or 2 pkts Splenda (I use two)
1 or 2 tsp of cinnamon (I use two, I really like it)
1 tsp vanilla
1 egg
1 tsp veg oil

Mix it all together and microwave for 1 minute. Let it sit in the cup to firm up a little. They are so good! I like to toast it, this morning I mixed some cream cheese, a little splenda and a couple strawberries and slathered it on the muffin, DELISH!!!! These are also wonderful toasted.
