Default Veggie loaded breakfast

I just made this today and it is YUMMY! It's a healthy, slow-carb reinterpretation of a crispy potatoes and green bean skillet. It's more of a method than a recipe, and is super customizable.

1. Instead of potatoes I sauteed zucchini with onions and garlic then added some green beans, spinach and black beans.
2. Top the veggie mix with two whole eggs and throw a lid on the skillet. Cook until eggs are sunny side up.
3. Season with salt, pepper and paprika (or whatever else floats your boat)
4. Enjoy!
