I love roasted veggies, too! And I eat broccoli almost every single day! It's my very favorite veggie.

My new obsession is roasted Kale. I crave it the way I used to crave chips and pretzels... soooo delicious!

So I have a big ole batch of roasted broccoli sitting here with me and I must report it is mighty yummy! Thanks for the recommendation! Can't say I crave it more than cookies, but I definitely prefer the calories in broccoli over that in cookies!

Ooo, that sounds tasty. How do you make it?

I followed this basic recipe, though since I'm vegan I didn't use any parm cheese and I also used a Cajun spice.

I like them "all the way" crispy as described in the above recipe, but I also like them "almost crispy" when they still have a bit of moisture in them (this kind is particularly good with lots of garlic).

Very tasty.

Okay. This I have GOT to try. Yumm. That whole blog is full or lots of other yummy sounding things as well. Thanks for passing it on.

Lisa, glad you enjoyed the broccoli and can appreciate the lower calorie content as opposed to the high one found in - cookies.

Roasted veggies. Who knew?
