If I had the time to make it for breakfast for myself every day, I would eat two whole eggs, scrambled in a bit of olive oil, with a whole mess of onions, garlic, peppers, tomatos, and other veggies sauteed alongside...and a huge glop of salsa on top. And I would have no qualms about doing so...that's a super-healthy meal!
Hmm, now I'm wondering if maybe I should change what I usually eat to include hard-boiled eggs, since I can't have my scramble every day.
