Default Another recipe for conversion--Fiber One Muffins

Again, if someone would be willing to help me out by sending this recipe in to see what it would count OP. I'd also be interested to hear what I could substitute for the buttermilk--any ideas?

Thanks!
GoalSuccess

Fiber One Muffins:
1 c. whole wheat flour
1-1/4 t baking soda
1/2 t salt
2/3 c splenda

1-1/2 c fiber one cereal
1/2 c boiling water

1/4 c eggbeaters or egg whites
1/4 c unsweetened applesauce
3/4 c nonfat or lowfat buttermilk
1/2 c raisins

Blend dry ingred. together in a bowl (flour, salt, splenda, baking soda). Soak Fiber One in hot water until all the water is absorbed. Mix together wet ingred (buttermilk, eggbeaters, applesauce) and stir into dry mixture along with Fiber One just until lightly mixed. Don't overstir!

Divide batter into 12 muffins in tin sprayed with Pam and bake at 375 until browned--about 20 minutes
