Default I am looking for a good cake or cupcake recipe

for my DS's birthday tomorrow (he's gonna be 8) I'd like to make something but it has to be simple and not make me feel guilty for trying a little piece.

It's hard to beat (pun unintended) angel food cake....the egg whites make it relatively low in fat compared to the buttery kind of cakes, and it's nice with berries and just a drizzle of icing...

or you could always make a cake mix with applesauce instead of the oil. that's what i've been doing for the kids' bdays since i started back on LAWL. otherwise the angel food cake is a great idea!

Here's a pretty guiltless chocolate cake- all natural, no HFCS, no cholesterol, no oil added and you can make a rich frosting to put on your son's part while still enjoying your portion (with a nice fresh berry sauce perhaps?).

No-Fat added rich chocolate cake:

* 2 cups flour
* 1 cup sugar
* 1 T. cornstarch
* 2 tsp. baking soda
* 1/4 tsp. salt
* 2/3 cup cocoa
* 1 1/2 cups applesauce

Pre-heat oven to 325 degrees.

Prepare a cake pan (shaped or bundt works best).

Combine all of the dry ingredients together in a large bowl, mixing well.

Add applesauce and mix well.

Pour into the cake pan.

Bake for 45-50 minutes, until done.

You can also try the Diet Cake. You dont follow the recipe on the boxed cake mix, you just pour the cake mix and one can of diet soda in a bowl and mix together then bake for the time on the box. You may have to keep an eye on it though.

Chocolate cake mix and diet dr pepper makes for an awesome combo, and in my experience sprite (or lemon lime) and vanilla cake mixes dont go well

Oh, and you can use fat free cool whip as icing too. Its actually what I prefer, sometimes I mix a box of jello pudding into it and use that for a sweeter flavor on the icing bit.

They also now make a line of less sugar % cake mixes I think Duncan Hines, I haven't tried them but I know people who have and like them!

I would do the suggestion of angel food cake, drizzled with some strawberries that I had let set in some splenda for a while to "juice up". Then, on top of that, put some cool whip. Gosh, that sounds good.

I went with a FF angel food cake with LF cool whip mixed with instant FF white chocolate pudding mixed in for icing. It sure smells good, lets hope it lasts till it's cake time

I will do. Today is his actual b-day and he is out camping locally with grandma and grandpa (who's b-day is tomorrow) so we are going out for the day and if everyone likes it I'll make another for the kids party next weekend

I have a question on the icing--did you mix the pudding according to package and then add to cool whip, or just add the mix to cool whip. It sounds really good and I want to try it!

Thank you!!! Sounds like a really easy way to make a treat, or would be really quick to fix to take somewhere--just pick up a cake from the store bakery, the cool whip and pudding, and you would have a dessert in a jiffy!!
