Grilled Chicken with Mango Salsa
Ingredients:
2 small mangos
1 Tbsp. lime juice
1Tbsp. + 1 1/2 tsp. orange juice
1/4 small onion, finely chopped
1/4 tsp. Morton Lite SaltŪ
5-6 drops hot pepper sauce
2 tsp. chopped fresh cilantro
4 (3 or 4 oz.)boneless, skinless chick breast halves, size according to plan
2 tsp. vegetable oil
1/2 tsp. Morton Lite SaltŪ
1/4 tsp. ground black pepper
Preparation:
In medium bowl, combine the mango, lime juice, orange juice, onion, salt and pepper sauce. Stir in the cilantro.
Coat a grill rack with cooking spray. Preheat the grill. Rub the chicken with the oil, and season with salt & pepper.
Place on the rack and grill turning once, until juices run clear, and a meat thermometer registers 170, 10-12 minutes.
Serve topped with salsa.
