Taco Rice Casserole
1 1/2 lbs ground turkey breast
1 envelope taco seasoning mix
3 cups cooked brown rice
1 (14 oz) can stewed tomatoes, no salt added
1 cup shredded reduced-fat cheddar cheese
1/2 cup reduced-fat sour cream
1/2 cup sliced stuffed green olives
Brown turkey, then drain fat.
Add taco seasoning and stewed tomatoes to turkey.
Place meat mixture into a casserole dish coated with cooking spray.
Top meat mixture with rice.
Sprinkle with shredded cheese and bake at 350 degrees F until cheese is melted.
Serve with sour cream and green olives.
Makes: 8 servings
