Default Mother's Day....Breakfast in Bed

I wanted to share this letter given out at my COD today

It reads....

Dear family

In case you were wondering what to do for me this Mothers Day I thought I'd give you an idea. Breakfast in bed sounds delightful and these recipes fit right into my healthy eating! Can't wait to try it!

Love Mom

French toast
(1 slice = 1/2 protein, 1 starch, 1 fruit)

Ingredients
1/4 cup (60ml) egg substitute
1 Tbsp skim milk
dash of sugar substitute
dash od cinnamon
dash of nutmeg
1 slice of diet bread
12 small strawberries, sliced
nonfat cooking spray

1. combine egg substitute, milk, spices and sugar substitute in a shallow bowl; mix well
2. Add slice of bread to egg mixture and let stand until egg mixture is absorbed.
3. Coat skillet with nonfat cooking spray and heat over meduim heat. Place bread in slillet and brown both sides.
4. Top with sliced strawberries and serve.

Broccoli Omelet bake
(1 omelet = 1 protein, 2 vegetables, 1/2 dairy)

Ingredients
2 or 3 eggs (size according to plan)
1/4 tsp dried basil
1/2 tsp garlic powder
1 tomatoe cut into 6 slices
1/2 cup (125 ml) cooked broccoli, chopped
1 oz (28g) reduced-fat cheddar or swiss cheese
1/4 tsp lite salt
1 tsp dried onion
2 tbsp skim milk

1. Beat eggs until light and fluffy
2. stir in broccoli, onion half of the cheese, milk, salt, basil and garlic powder.
3. pour into ungreased baking dish.
4. arrange tomatoe slices on top: sprinkle remaining cheese.
5. Bake, uncovered at 325 for 20-25 mins

Fruit and yogurt Parfait
(1 starch, 1 fruit, 1dairy)

ingredients
9 small strawberries, sliced
8 oz (250ml) vanilla nonfat yogurt
1/4 cup (60 ml) blueberries
1/3 cup (85ml) high fiber cereal
1 packet atificial sweetener

dice 1 strawberry. fold into yougurt.
In a bowl, toss remaining berries with articial sweetener.
In parfait glass or wine glass, layer the yougurt, strawberries, blueberries and cereal. serve chilled

Turkey Sausage
( 1patty= 1/2 protein)

ingredients
10 or 14 oz (280 or 392g) ground turkey breast- size according to plan
1/2 tsp dried sage
1/4 tsp fround pepper
1/4 tsp cayenne pepper
1/4 tsp lite salt
nonfat cooking spray

1. in a large bowl combine turkey and seasoning. mix well
2. shape into 2 1/2 oz to 3 1/2 oz patties, size according to plan
3. heat skillet coated with nonfat cooking spray over a meduim flame.
4. add patties to skilllet and cook thoroughly on each side, or to a internal temperature on 165 degree f
5. uncooked patties may be frozen

I thought this was a great thing to get mine is going on the fridge for them to see and lets see which one they will make

Thanks for the ideas, I was trying to tell my girls, who want to make me B. in bed, that Mommy does not want...well, maybe...anyway, I CAN"T have pastries, etc. I am going to write out a menu for them and tell them, they can make me any choice on the menu...that way, I stay POP! Thanks for the good ideas! have a great Mommy Day!
