I HAD big weekend plans. I got offered Final Four tickets for this weekend but chose to turn down the trip to Indy. I've been to a FF before and know that food selections are limited in most places (too much crowd for regular menus) and it is nearly impossible to carry it all with you (especially since the closest hotel I could get was over an hour from the game location).

I'll be cheering from my alumni club's game-watch location right here in town. It still has challenging food offerings but at least I'm in charge of my kitchen and can easily take what I need/eat before I go. They do offer a salad.

My team did not win the championship at the other 2 Final Fours I attended (05 & 2010) so maybe, just maybe staying home will be the luck charm. (If it is, I'll never go to another FF LOL).

Here's to staying on track!
And to those who celebrate:

Lisa I hear you its all about doing what is right for us. I have turned down Girls Night Out dinners because I look at the menu on line and find nothing I can even remotly make fit!

We are home for Easter and I am cooking so there will be no easter candy in the house (DS turning 17 & not interested). I am making prime rib, roasted cauliflower, green beans and salad..mashed potato too for the folks who can endulge LOL...not I.

Today I am heading out to the madhouse of stores to get stuff needed for easter and to make it thru the weekend...

Lisa - good luck to your team!

I am hosting brunch for Easter. My son and DIL are on "Whole 30" if you've heard of it - restrictive paleo based 30 day plan to eliminate the foods that most often cause inflammation, autoimmune flairs, etc. I love making brunch, and in the past I have put out a huge spread, including all the yummy carb-laden, fat-laden indulgent brunch items you could imagine! This year, it will still be yummy, just not carb and fat laden! I will have foods I can eat, for sure - my challenge will be portion control to keep within IP guidelines. Only making 1 'sweet' for the grandkids. "Bunny" cinnamon rolls I saw on Pinterest. TGIF everyone!

Good morning all! TGIF!

Four-day weekend for me - my kiddo is off today too so we will be running errands, and getting ready for Easter. He's 6 so the Easter Bunny will be bringing a little candy, but mostly little toys and stuff. I'm fixing Easter lunch so there will be a mix of things I can eat plus a healthy dessert for everyone else.

We just found out last night we are going to SIL's for Easter dinner. My MIL is unexpectedly coming into town as they are moving back to the area - and they are bringing fresh ham - a pig they raised and recently had slaughtered. I don't know if I've ever had such fresh / unprocessed ham before and figure I will just need to stay away from the visceral fatty areas. Actually kind of excited to be trying it out.

I will probably be asked to bring deviled eggs (which is fine) but I may also take a small side-dish of cauli-rice (my SIL, niece, & her husband are all very health-conscious). Rice isn't a very "traditional" Easter side (at least not in our families - its potatoes) I thought about the Mexican cauli-rice (lol) but yah ...any suggestions?

Enjoy your fresh piggy! As for Easter dinner, what about doing a mashed cauliflower instead? It's like potatoes but still OP. But honestly, who cares if your "rice" isn't traditional? This diet is about making change, and sometimes traditions need to be updated to fit with a better lifestyle.

Good morning, happy Easter long weekend!

Today is my last day on Phase 3 and I will be heading to the cabin. DH and his band will be busy recording this weekend, but I will be home for Sunday dinner at the inlaws. I'm making apple pies at DH's request. I planned for Sunday to be my cheat day, and it will be a big one! Then time to flex my will power muscles on Monday to get back on track.

I hope everyone enjoys their Easter/long weekend plans and GL staying OP

I'm in the same boat--trying to figure out what side dishes to make that other people will eat. I made a cucumber/onion dish marinated with EVOO/vinegar and spices for another get-together and it was very popular. I'm leaning toward a cauli-rice dish (maybe the Asian one) or roasted Brussels sprouts and asparagus. I love Brussels sprouts, but just realized last night that they are an occasional vegetable. I hadn't checked the sheet recently and missed that. Oops!

Hello all! Sounds like everyone has great Easter plans! I don't think we're doing anything, which sounds really nice right now. We have been traveling the last two weekends, and I'm tired of driving, and would really like to get stuff done around our own house this weekend. It's finally consistently Spring weather, and there is a lot of spring cleaning that needs to be done!

I've had a few cheats this week, and I feel like it's slowing me down. I need to get back to basics and stick to it 100%. I think I'm just going through some diet fatigue, so I need to try new recipes and make it exciting again!

Morning Everyone!

What about a mixed pepper slices side dish to go with the cauli-rice? Some chayote "apple" sauce (use IP or WF pancake syrup or even a couple drops of maple essence, along with some stevia packets - grind it all up with a few drops of lime juice and BAM, instant fruity side) because who doesn't like pork with apple sauce?

For those looking for inspiration for healthy sweet Easter treats, take a look at Quest Nutrition's 15 second recipes using the Quest bars, just be aware that some fall into the restricted or super restricted calorie/carb range and adjust eaten quantities accordingly. There are some fantastic recipes in there.

I'm just 5 weeks into IP, and I keep seeing other March starters freaking out because they haven't lost weight 3 days into week 2 or 3.

Here's my food for thought:

I'm a daily-weigher because I love data. I started weighing daily after two weeks, and at first I was concerned by my progress. But after watching my weight daily over the past few weeks, I've realized how incredibly inaccurate daily weighing is, and after seeing comments from other daily weighers, I see how detrimental it can be to a person's motivation.

I've now learned to expect my weight to remain +/- .2 pounds all week, drop several pounds a few days before weigh-in, and then go up about .5 pounds for my weigh-in. I've learned that this is completely normal for my body, and as long as I stick to the diet, I am successful every single day.

This week, I watched my weight go up three pounds since last week's pre-weigh-in drop, then down one just this morning. But having watched my erratic losses in the past four weeks, it's totally not a big deal. I'm still 100% OP, I started running this week, my belly is visibly shrinking every single day!

Pounds be damned, I'm doing awesome this week.

It's just the hubby, dog and I for Easter this year (as usual) so we'll be having lamburgers and cucumber salad for Easter dinner. Can't get any more IP compliant than that!!!

This time around I only WI at the IP place, not at home too. I "feel" lighter, still puffy from being sick though. Still drinking a ton of water. Hopefully my Monday WI will finally show some progress.

Great Dane, it's just me, my dog, and my hubby for Easter, too! My younger son is still in college and my older son lives out of state so there will be now Easter treats aound my home.

As I am new to IP, I have a question regarding cucumbers (you mentioned you were making a cucumber salad)--I see they are both on the unlimited veggie list and 'veggies which count towards two cups at lunch and dinner'. So how do I treat them? A grilled lamb burger and cuc salad sounds soooo good!

Thanks!

Wow, kudos to you for skipping the FF due to bad food offerings! I shall be watching with hubby but our team (son's college) didn't make it to the FF. At least I won't be a nervous wreck as I usually am when my teams make it to tournaments, bowl games, etc. Good luck to your team! BTW, your weight loss pics are incredible!
