Newbie in need of potluck recipe
Just found out I need to make a dish for women's brunch and I'm at a loss. I don't want to use my IP packets but I'm thinking a veggie tray may not go over well. They usually have a lot of fruit, breakfast bakes, oatmeal bakes, and sweets. I have to contribute but would like to be able to eat it as well. I usually take a bar with me and don't fix a plate and last time had to endure the woman next to me talk about how she lost 70 and didn't restrict anything from her diet. If anyone has a great crowd pleaser for me it would be greatly appreciated.

What about asparagus with toasted sesame seeds and olive oil drizzle. A friend just made this for me and she said it's her mom's brunch recipe that she serves cold (she uses sesame oil but I think it would be fine to replace with olive oil)

How about an omelet bake using eggs, spinach, mushrooms and peppers ? I bet Rainbow Smiles has a recipe....that thread was bumped recently.

If it's a breakfast or brunch, you could always make a big pan of scrambled eggs and bring tortillas and salsa for egg wraps - you can have the eggs as long as they aren't made with milk, and the salsa is fine. You could even make your own salsa or pico de gallo! |

Cold cooked salmon pieces over the asparagus? Savory, protein and vegetable. Can't get any better than that. :)
Or something like .. Golden Goddess Soup with loaves of crusty bread for them and premade Artisan Flatbread for you. |
