Still focusing on staying around 60 net carbs per day until the water weight comes off....I'm close, down five of the six pounds that came on during my fun weekend. I did go to 80 net carbs yesterday, just to have some variation.
Here is a recipe I made up by reading various online recipes for inspiration. I think it would fit as a carb meal for everyone looking at that.
Slow cooker Chipotle Pork
Ingredients:
2 lbs pork tenderloin or other pork. .I used half tenderloin and half boneless chop (could also be chicken)
1 large cauliflower chopped big
2 yams chopped big
1 yellow onion chopped medium
1 can Chipotle in adobo ( I cut up the chiles)
1 8oz can veggie broth
1 large apple chopped about 1/2"
1 tomato chopped in wedges
Cumin
Cinnamon
Salt and pepper
Yogurt
Seared all meat on all sides with olive oil and salt and pepper
Sautéed onion with olive oil and lots of cumin
Put onion in, then meat, then adobo peppers chopped
Added cauliflower, yam, then more cumin and cinnamon
Added apple and tomato
Poured in broth and added a little extra water
Cooked on low for 3 hours, then high for 1 to 1.5 hours
Stirred food and shredded pork then mixed it back in
Served in bowls with some yogurt on top
It could probably be cooked only on low for 6 hours, but have not tried that.

Had some wine this weekend so back up to 139 but that's ok. It's not even my middle of the road "whine" ( did you see what I did there?) weight.
Decided to bump up my calories by 100 and see what happens. I've been bouncing between 136 and 139 for the last couple of weeks so it's an experiment. But I didn't even get close today.
Chipotle pork sounds good... I have to get organized to use my slow-cooker, lol. I'm bad at mainly being a 'what are we going to eat for dinner' person only at lunchtime, and that means something quick to defrost for that night. I think I have made a roast (pork or beef) about 6 or 7 times in 33 years. Roast leftovers for days on end is SO not our thing. Maybe if I find a tiny chunk of pork loin. We usually buy local organic free range loin chops - 3 to share - instead of a whole loin.
