Congratulations to everyone on all their success and to a great start to the week.
One of the things I struggle with is that I love to cook and it is a bit tough to flex my culinary muscles OP. BUT tonight I am so happy with awesome dinner made entirely from leftovers! It is 90+ degrees today, so this was a crunchy and delicious treat that took about 10 minutes.
Pork Tenderloin Lettuce "Tacos"
6 oz. leftover pork tenderloin
1 C shredded cabbage (with a little vinegar)
3/4 C mixed bell peppers
1 large green onion (sliced)
6 leaves bib lettuce
1. Cut the peppers and pork into similar sized strips
2. Sautee the peppers with IP-approved spray until slightly softened
3. Add the pork and then the green onion
4. Set up a plate with the lettuce leaves and shredded cabbage
5. Make your lettuce wraps
See photo below! This was a lifesaver because all I've wanted lately are corn tortillas and guac.

I have a question. How do I prep to begin my diet? I get my food order on Thursday (Im doing a virtual clinic) and Im not sure if I should stop eating all sweets and breads and stuff now to prep myself, or if I should just wait until my order comes in. Any advice?

My only peeve about IP is the sudden and drastic diet change. Yes! If you can start weaning yourself now but, there's not much time between when you will start. Begin adding more veggies and cutting back a little more each day on the things you can't have on IP. But, allow yourself to eat the same quantity of food you're used to, just switch types. This is just my 2 cents, not a professional but you're on the right track so go with it.

Yah - I was getting fed up about ALL those boxes taking up room when there was only a couple of packets left in a box. Plus, I organized in alphabetical order so when I know I want something, I just have to reach in and grab instead of sorting through everything

NSV -- I made it through bunco without snacking on anything or drinking anything other than water! I really wasn't even tempted. And one of the treats on the tables with carmel corn -- my favorite! And usually since I have a glass of wine, I start sweating. Tonight it was warm in the house and without any alcohol I was one of the only people NOT sweating!
Yay for me! :-)

It's the Valentine's Cupcake recipe (Page 6): http://www.3fatchicks.com/forum/idea...ss-center.html with Rainbow's brilliant idea of adding a flavour syrup to the icing to cut down on the "chemical" taste of the marshmallow dip. Really yummy! The chocolate "cake" is really good, tastes like a real treat.
Thanks all for the birthday wishes!
Tomorrow is WI day and I'm not feeling big things this week - feeling a bit bloated and blah but who knows??
Oh and the baskets in the pantry for IP packets - brilliant!!! Love it and will be heading to the dollar store to find some baskets!
