What is your absolute favorite food/meal/recipe to eat on IP? I need something really good today.

Spaghetti and Meatballs- Zucchini noodles and lean ground beef with WF Tomato Basil sauce!

Stir-Fry- Chicken, broccoli, cauliflower, bean sprouts, peppers with soy sauce and cauliflower rice on the bottom!

Buffalo Chicken Salad- Sauteed chicken with hot sauce over a salad of lettuce, cucumbers, peppers and tomatoes (occasional veggie) with WF Blue Cheese dressing!

As is said every time thread with a similar topic is started, everyone has differently tastes so this is going to be different for each person. I love seafood. I saw a post this morning from someone who doesn't eat it. I'm not a tomato fan so I don't miss them at all OP.

I eat very little poultry just because I get tired of the flavor very quickly.

I'm also big on Mexican flavors so I have a lot of taco salads or pork carnitas with mockamole (recipe is in recipes #4)

We had steaks and caulimash last nite. This is a weekly dinner at our house so it MUST be a favorite. Today we're going to a Greek fest. I already checked out the menu and I'll have salad topped with meat.

There are LOTS of recipe threads linked in the first post of the daily chat, both for packet hacks and for meat meals. Check those out!

I love making a coconut curry soup with the chicken soup packet. I sautee mushrooms and zucchini in 2 tsp. coconut oil and some madras curry powder and salt. I'll add either shrimp or chicken to it. So good and such a hearty bowl of soup!

Taco salad:
8oz FF ground beef
1 1/2 C lettuce
2 C assorted veggies

Salad dressing is equal amounts of WF spicy BBQ Sauce and WF Ranch

Chocolate banana bread or chocolate vanilla bread. Its a large serving and is yummy with tea or coffee in the morning and/or a snack later in the day.
I also love making a veggie panini for lunch or for dinner with turkey or chicken breast added.

I love buffalo chicken meatballs. Finely chop pepper, onion, mushroom, zucchini, garlic our whatever veggies you like. I use my food processor then squeeze excess juice out. Add ground chicken and spices. I like parsley, thyme, cayenne, chili, garlic, onion powder, salt, pepper. Mix it together, add an egg, and form meatballs. I lightly spray a foil covered baking sheet with olive oil and bake with that at 375 for about 35-45 minutes. When they are done, toss in buffalo sauce. I like eating them with celery, salad, or cauliflower mash.

I also love taco salad. I cook ground beef with lots of spices and add a small can of diced tomato with Chiles (tomato day), hot sauce, let it simmer and reduce. Make a salad of shredded lettuce, onion, peppers. I get a great fresh salsa in the produce aisle at the store, no sugar or ingredients I can't have. Then I top the salad with cilantro and a homemade lime vinaigrette.

My current favorite IP meal is Lamberjules Italian Shepherd's Pie! Such fantastic flavors in that dish. Another favorite that is so darn easy is simply a grilled lean steak with grilled veggie (usually asparagus or zucchini with red pepper).

My apologies for not sharing a creative recipe but I love the dark chocolate pudding packet so much. It is such a treat for me to have pudding - something I would have never done prior to IP!

Have you tried topping it with a teaspoon of Walden Farms Caramel Syurp and a sprinkle of sea salt? Sooo good!

I really enjoy sauteed baby bok choy with shrimp or chicken breast.

You can cook the protein before you do the bok choy, or add it in while you cook the veggies.

use a teaspoon or two of oil to sautee 2 cloves chopped garlic and a tablespoon of chopped ginger over medium heat, once fragrant add your washed bok choy (don't dry them), turn up the heat to med high, toss the vegetables in the oil and cover in the ginger, garlic, work fast so it doesn't burn, as the bok choy turns bright green add the sauce:

1/4 cup of chicken stock, 3 tbsp or so of tamari soy sauce, splash of rice wine vinegar, i use a garlic press to squeeze some ginger juice in there as well. (this is all approximate, I don't really measure)

cover turn the heat down a bit, and steam for about 3 minutes, remove lid, and add cooked protein, reduce sauce a bit. You can thicken it with a bit of xanthan gum, but I usually don't bother. It will be thin.

I love veggie frittata. In a skillet, cook veggies (today it was cauliflower, broccoli, asparagus, mushrooms, chard) in olive oil, then add eggs/egg whites. Cook in the skillet until about halfway cooked, then bake in the oven until firm and cooked through. Delicious and so filling!
