Default Muffin Recipes

I have been searching for the muffin recipes everyone speaks of, but have not been able to find them. The search feature on this site is not great. Please post your favorite muffin recipe using IP products or alternatives.

I use WS. 1 packet of hotcake mix, 1 packet of apple oatmeal, 1/4 cup water, 1 teaspoon vanilla, 1 teaspoon Splenda, cook for 12 minutes at 375. A little dense and a little dry, but love the taste.

Default zucchini/packet muffin recipe

here is a link Muffin Recipe (I found it by the search feature - using search is about having patience)

And here is the recipe.

Here's how I do it (yup, recipes are somewhere but I've copied my favs to my iPad so I don't have to search)

1 egg white (i think the recipe says 2 but I use 1)
pinch salt
whisk egg whites til frothy but not peaked

add 1/2 tsp baking powder + any spices you want
add your packet of choice (I mostly use potato, alternative maple-oatmeal, banana pudding, lemon pudding, blueberry whey powder)
add 1 c (from raw) lightly sauteed shredded zucchini (keeps them much more moist!)

Bake in muffin tins 350 F for 15-20 min. My oven is weird. Timing is different every time. Make 3-4 regular-sized.
I've been making 2 batches each of maple/zucchini and potato/zucchini & storing in fridge. I just don't have many grab & go options anymore after removing soy & wheat.

And now I've discontinued the maple oatmeal due to the soy content

The easiest way to search is with google. You can also include 3fatchicks with whatever else your search terms are to help narrow it down.

Lisa, what is the issue with the soy? I take thyroid medication and I have been reading some things about soy not being good.

1 packet ip pudding
1 packet ip drink
2 packets truvia
3/4 tsp baking powder
2 egg whites
vanilla
pinch of salt

combine liquids until frothy, add in combined dry ingredients. It will be very thick, add water until it is smooth, but cannot be poured. Put in two sprayed pyrex bowls (the custard type) Sprinkle with a bit more truvia.

Bake 10 min at 350. When time is up, turn oven off, don't open oven, leave in another 5 minutes.

Consistency is like a lava cake.

I never thought of blueberry whey powder! That sounds great! I may have to try to make some muffins! Yum!!!

Both soy & gluten are notoriously hard on thyroid function.
You won't hear it from many conventional medicine (MD) but you'll hear it from integrative medicine docs, functional medicine docs, and naturopaths. The mainstream med world only believes in treating symptoms, not in finding root causes (hence treating with synthroid, rather than searching for the cause of thyroid dysfunction). Another substance that is VERY hard on thyroid function? Fluoridated water.

I just always opt for less. Since one worked, I never used 2.
And I don't add any extra sweetener b/c I really don't want to crave extra sweets in the long run
I usually make a batch of 4 servings at once (to fill the cupcake pan)

I used to use the blueberry pudding but they have discontinued. Wildberry yogurt works but not the same.
