Can I just eat more lettuce and count it towards my vegetables? I like lettuce and am trying get in more of the other vegetables but it's a struggle for me.

Unfortunately no, lettuce is classed as unlimited and doesn't count towards your vege intakes

You can have as much lettuce as you want (romaine, iceberg, butter/boston) - but you CANNOT count it in your daily veggies. There is not enough nutritional content in lettuce for it to count as a veg, that's why it's free.

There are lots of ways to get in your veggies, many folks blend spinach into a chocolate drink for a breakfast shake (you can't taste the spinach), you can also puree veggies and add them to soups which reduces the "bulk" of the veggies.

I went through all P1 not trying spinach in a chocolate shake. Now in maintenance and I have it all the time!!! I take two cups (give or take) of baby spinach and one chocolate drink (or any protein drink) and blend it together until the spinach is "gone". It's amazing!!! It's a must try. I use a Magic Bullet. I don't know how well a regular blender would work.

Seriously, this is a must!!! Especially if you just want to get the veggies over with!

Have you tried roasted cauliflower yet? It has been a hit with the entire family. I have to make extra so that I can get my needed allotment. My young nephews tried my rutabaga fries a few weeks ago, resulting in me having to make enough for the entire extended family Thanksgiving weekend. Something about roasting with olive oil, salt, pepper, and oregano just transforms those veggies.

Two that work really well for me are rhubarb and jicama. If you haven't tried them yet, give them a whirl.

With rhubarb, I cook it with spices and stevia. It tastes like applesauce.

Jicama I eat raw sliced up with either chili pepper and salt or cinnamon and stevia.
