I know exactly what you guys mean by the temptation to grab for things that goes through the mind, but thankfully doesn't reach the hands! My first week I remember grabbing a peppermint on my way out of salsa lessons and the bf said noooo! You cant eat that! Ever since I dont reach for things but my brain sure tries!

Is lettuce/salad optional?
As long as I eat my 4c of veggies/day, can I skip salad/lettuce if I'm not hungry for it?

You can skip it or just have a really tiny salad. I noticed on the days that I skip a salad, I have issues with constipation. The salad is also a good way to get in your oil for the day. You definitely need to make sure you are getting the full allowance of oil.
The first few weeks I had tiny salads, because I wasn't a big salad eater and wasn't very hungry. My salads have been increasing in portion sizes, because I get really hungry now.
I only have 1 salad a day, but now I use half a bag of the fresh express romaine along with some allowed veggies. This morning while I was getting my lunch salad ready, I debated weather or not I should just dump the whole bag of romaine in my salad container. =)

Happy WI Wednesday for a lot of us! I just did mine, down 1lb and 1.25 inches! I'll take it!
Finally decided to lower my goal weight - I'm feeling GREAT about where I'm at but I think I can get lower than I originally thought and still be able to maintain comfortably. I'm starting to get the exercise bug too - I found a couple of yoga resources that I may try out, and if money allows there's a yoga studio nearby that has a good gentle yoga class. I just want to improve my flexibility and start to get some core strength back!
Hope everyone has a fantastic day!

By 10 pounds, down to 160. It's a little lower than where I was at before having kids, I maintained for a long time at 165-169. I figure I can shoot a little lower and give myself a cushion for phasing down to maintenance. Who knows, I may change it again as I get closer, we'll see what my body decides to do!
