mixed in a small glass dish
and cooked as instructed with 50 ml water and
microwaved for ONLY 30-40 SECONDS....
so that the middle is still gooey...

then i mashed it all together with 1 TBSP PB2!!

https://www.nashuanutrition.com/stor...ake-7-box.html

it was thick and chocolaty!!!

then i rolled out 6 little truffle balls...

in another small bowl i added 1 tsp (teaspoon) PB2 and
1 tsp powdered stevia ( or splenda )

then i sprayed the little balls with non stick spray to make them moist
i used the coconut oil one...OMG!!! but you can use regular olive oil

then i rolled the little fudge balls in the DRY PB2 and stevia until coated!!

Whole Foods carries it too. I normally order mine from netrition.com as it's cheaper. Haven't used it since I started alternatives to IP..it's just been staring at me every time I open the refrigerator.

Default Baked Delicata Squash with Chili Lime Butter

Baked Delicata Squash with Chili Lime Butter

Cinnamony Brown Sugar ZESTY LIME GOODNESS!!!
sort of a cross between a sweet potato and butternut squash!!
ONLY BETTER!!!!

this is delicata squash....it IS considered a winter squash,
however, it is a LOW CARB choice, so i use it as a veggie choice....ALTERNATIVE!!!

this is the nutritional values...so use your own judgement

inside it is similar to pumpkin...and you just scoop out all the seeds
and leave the lovely orange center to bake!!

use as many delicata squashes as you need servings. 1 squash equals 2 servings.

Preheat oven to 350 degrees. Clean all your squash by removing all the seeds.

Place the squash cut side down into a baking dish.

Pour water into the dish to about 1/4 inch deep.
Bake in preheated oven until the squash pierces easily with a fork, about 30-40 minutes.

this is what i used...

Meanwhile, melt your butter, and blend the butter with the lime juice and chili powder in a small bowl. add the cinnamon brown sugar syrup to taste

Mix in the lime zest. Season to taste with salt and pepper.

Spread the butter mixture into the cooked squash, and serve immediately.

You can serve it in the shells for an elegant look...or you can scoop it out and sort of whip it and make a light souffle like texture and mound it on your plate!!!

i usually serve it in the shell....

this also freezes well.

WANNABITE??????

Has anyone tried this with the WF peanut butter? It tastes a little funky on its own, but I'm curious if it would taste better when mixing in the peanut butter truffle recipe.

i don't think the WF peanut butter would work because you use the PB2 peanut butter powder DRY.

Hi 2sweet4u,

I worked with Rainbow to make sure the recipe book I've created was okay to share with anyone. That's why I have it out on Google Docs and keep it updated so anyone can enjoy Rainbow's creations.

Not sure you're aware there is an earlier book. You might also be interested in these recipes.

Here's a link to the first book
