Restarted 1/3/14! - I Initially started IP August '12 and had great success with a 90+ lb loss. I took a break for a bit, and now I'm back to finish what I started - 100% all the way!

I don't have a food processor so I put 2 florets of cauliflower into my blender and added one whole egg and an egg white along with vanilla essence, stevia and cinnamon. The ingredients blended into a smooth batter. I made pancakes for my kids and husband so was able to continue with the pan and make some for myself. I did find that it was better to cook them on a low heat to make sure the center was solid, so I was able to turn/flip them without too much damage and then turn up the heat and brown them. Some days I feel like I need an extra meal or a snack. These are perfect with WF pancake syrup.

I ran out to get cauliflower today to make these. I don't love them as much as my crispy cereal pancakes, but they are really good to fill up and not have to use a packet!

We can't have the cauliflower pizza crust recipes that include cheese - no cheese on Phase 1. But this recipe below only uses egg whites and seasonings, so it's fine to have on P1.

Cauliflower IP Pizza #1 - 8oz protein + 2 cups Veggies

Ingredients:
Cauliflower, crumbled
3 cloves Garlic, chopped
2 eggs whites
1 tsp Italian Seasoning

Pizza Toppings: Italian Seasoned Ground Turkey, Fresh Basil Leaves, Tomato Slices, Bell Peppers, Mushrooms, etc.
Optional: Veggie Cheese, sparingly (talk with your coach first)

Directions:
Preheat oven to 450 degrees F.
1. Combine cauliflower with garlic in a food processor and pulse until crumbly, being careful not to overmix (you donít want it to become a paste). You can also use a box grater to shred the cauliflower.
2. Microwave cauliflower ~8-10 minutes, allow to cool slightly and squeeze out excess water.
3. Stir this mixture together with eggs whites and Italian Seasoning.
4. Form into pizza crusts and bake them alone for ~15-20 minutes (or until golden).
5. Meanwhile, prepare any toppings you want: brown meat, sautee veggies, etc.
6. Remove pizza crusts, add Roasted Red Pepper Tomato Sauce, pizza toppings, and optional veggie cheese
7. Bake for another 10 minutes.

*You can use your puree as a pizza sauce!
*TWO pizza options available - either using your 2c veggies (for the crust and toppings combined), or alternatively below you can use an IP packet.

*1 medium-sized head of cauliflower (~4 cups chopped) yielded me two large pizza crusts.
*The crispy edges of the crust were the best part, next time will try making little mini-pizzas to maximize that part!

Forgive me -- I have read the thread but am just unsure on the measurements. I see some people using the 4 tbsp of cauliflower rice to the mixture of 1 whole egg, 1 egg white, 1/2 tsp vanilla, 1 tsp splenda, and cinnamon.

Is this what you all are doing, or are you using more cauliflower than this?

So I don't post much, mainly a lurker. But I have to say these pancakes were so delicious. I made them last night and was surprised at how pancake like they really were. Now, I'll have to try it as the Pizza crust, that sounds good too.

Yes, this is the recipe I followed. It seemed like it was enough cauliflower for me.

I always started with 1/4 cup and then added 1 Tbsp at a time if it looked like it could be thicker "batter". I always make these with cauli rice from the night before, so I usually have extra on hand.
