Wow - I really want to try this, too. I see that you add 1 whole egg. Is that okay on Phase 1? And do I count it as part of my daily protein?

I tried this but without the added sweetener and cinnamon. Worked great as a "taco" kind of deal for some chicken.

I also tried a stack of them with WF Syrup...my advice is to eat them quickly to avoid the veggie aftertaste...otherwise they were great.

Word of caution...an egg plus chicken is more than 1 meal allows...

You can just reduce your meat portion by 2 oz for every egg

Whole eggs are fine on phase 1. Whether you count it or not can be a matter of personal/coach preference - I often have a hard boiled egg in emergencies when I'm having hungry days, and do not count it. But if you choose to count it, each egg is equivalent to about 2oz of meat protein

Be careful substituting as the protein content is about 1/2 at close to the same calories. I love a hard boiled egg when I am feeling hungry as it seems more satisfying than a small amount of chicken etc.

I'm ordinarily not a big pancake fan (except for potato pancakes), and we have a local restaurant that makes the best potato pancakes. I've been craving them like mad.

The restaurant's recipe does have wheat flour in it, so about twice a year I say "screw it" and order them (and then deal with an itch, red rash on my face, hands, and feet).

Those potato pancakes were the first thing I thought of when I saw the photo of these cauliflower pancakes.

I think I'm going to try these without the cinnamon and sweetener and add some grated onion, parsley, and chive.

I'm not on IP, so I can even top with a little bit of light sour cream or my homemade yogurt.

I can't wait to try these, but we have quite a bit of fresh produce we have to use up first (we found some really good farmers' market sales) (unfortunately no cauliflower this week).

Eggs are very hard for the stomach to digest. They sit in your stomach for a long time. When I ran track, we would avoid eggs for breakfast because sure enough we would be hurling them by the end of the sprint. The flip of that is, since they stay in your stomach for a while, they are more satisfying and make you feel full longer.

It is an approximation for sure. But it is based on the IP protocol sheet which lists the egg equivalent of dinner protein as 4 whole eggs plus two whites. 1 egg is going to be "roughly" 2oz of meat protein based on that exchange - it's a little less, but you can't fraction an egg
