Well this crispy cereal is. . . . . interesting. Not sure I'll be having that one again. The cereal part is OK - white goo that's supposed to be milk - not so much. Been trying to choke that down for about 45 minutes. I keep looking at it and pushing it further away from me LOL. I feel like a little kid the first time my mother tried to convince me to eat brussel sprouts. I'd rather sit in the corner and cry. LOL.

ROFL!

In a small bowl mix
- 2 egg whites
- 1/4 tsp of vanilla
- 1/4 tsp of baking powder
- cinnamon to taste

Crunch up a packet of crispy cereal, add to egg white mixture and mix well. Add water a teaspoon at a time until the batter has the consistency you like.

Cook just as you would a regular pancake

I add some WF chocolate syrup to the recipe scorbett posted above and bake it in 2 little non stick muffin tins for 10 min at 350. They come out like little chocolate breads...delicious (and they will hold overnight if you seal them in a ziploc)!

I really didn't know how to cook a pancake when I started either...that's why I do it in the muffin tins....

As they say, necessity is the mother of invention
