Default Reenie's Rediculously Yummy IP Recipes

Who says we can't have spaghetti on IP?

This makes a large batch and allows you to have ready made meals!

Ingredients-
1 pound extra lean ground beef
1 pound turkey sausage any type, casings removed.
1 bag of miracle noodles--i really hate the smell and fishy taste so this is what I do...
Rinse them well, then I soak them for an hour in milk and rinse again
I then soak them in lemon juice until I'm ready to boil them.
For sauce:
( optional: 1/2 bell pepper, 2 cups zucchini, 2 cups of shredded spinach, 2 cups mushrooms)
1 large bunch green onion chopped
1 32 oz can tomato purée
1 32 oz can tomato sauce
1 12 oz can tomato paste
3-4 medium size cloves of garlic crushed
1T oregano
2T basil
1 T Italian seasoning
1 T fennel (plus 1 teaspoon for meat mixture)
3 T stevia or Splenda
1 T garlic powder (for meat mixture)
Take any or all optional veggies and mix with garlic and green onion. Sauté in pan sprayed with olive oil until tender.
Add spices, tomato sauce, puréed tomato, tomato paste and one cup water. Bring to a light boil stirring often. Add salt as needed and simmer for about an hour. Stirring occasionally.
Meat-
Brown lean ground beef with turkey sausage. Add fennel seed and garlic powder. Measure out into 5 ounce portions.
Boil and drain the Miracle noodles. Dry them between paper towels. In a small pot, Measure two cups of sauce and mix with meat mixture. Plate your dry noodles and top with meat sauce.... Freeze remaining sauce in 2 cup portions for later, do the same with the meat.
You will not believe the portion size of this comfort food! Enjoy!

That sound really good - but we can't have tomato sauce on IP We can only have 1 cup portion of regular tomatoes twice a week - which would be about 1/3 cup of sauce.

here is an IP approved spaghetti sauce

Marinara Sauce

¼ cup olive oil

1 teaspoon onion powder

1 garlic clove, finely chopped

1 celery stalk, finely chopped

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

1 (32 oz.) can crushed tomatoes

1 dried bay leaf

In a large pot, heat the oil over a medium-high flame. Add the onion powder and garlic, sautéing for 10 minutes. Add the celery and ½ teaspoon each of salt and pepper. Sauté until all the vegetables are soft, approximately 10 minutes. Add the tomatoes and bay leaf. Simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper to taste.

The sauce can be made ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.

i divide my sauce into 4ths.

(1) whole tomato is about 4 ounces crushed. so...

(1) 32 ounce can of crushed tomatoes is about 8 servings.

it does reduce some....and if you use 2 vegetable servings....
or about 8 ounces...then the entire recipe would make
4 (2 IP vegetable servings) does that make sense??

just divide the finished marinara sauce into 4ths.
