Default Artichoke

Hi everyone.

Hope it's ok to start a new thread with this....

I am wondering if someone could explain to me why in Phase 1 of Ideal Protein it says no artichoke?

I had a couple not realizing this and they are such yummy snacks. Low in carb, high in fiber, alright in protein and so many more benefits. Including detox and good for the liver.

Could someone explain please?

I just looked up nutritional value. 2 cups of artichoke slices would have 50 net grams of carbs. I doubt most would eat that many in one sitting, but we're limIted to 25-40g per day on Phase 1. A cup alone would put you at your carb limit for the day.

Edit to add never mind! That was for Jerusalem artichokes. Hmm

They are high in calcium, potassium, magnesium...Vitamin A, K, folate, would any of that be the culprit?

You probably want to pose that question to your coach for a more "official" answer, but it may have something to do with the balance of nutrients/carbs/fiber in it and how that relates to the Ideal Protein dietary intake. This diet is designed to be pretty precise when it comes to protein/carb/vitamin/mineral intake so something that's very dense like artichoke might throw that balance while in Phase 1.

I don't know much about alkaline vs acidic foods but IP is an alkaline program and I'm wondering if artichokes are more acidic?
