i started by making my english muffin type recipe for a bun...instead of the crepe mix...i started with the IP POTATO PUREE MIX....

1 potato puree packet
1 tsp baking powder
4 tbsp water

1 tsp evoo
2 tbsp diced roasted red pepper
7-8 diced jalapenos baby!! YUM!!

mix all in magic bullet til blended and cook in non stick skillet in an english muffin ring!! i cooked 3 mins on each side over medium heat and used non stick spray...be sure to spray your ring too!


this is what i used....

cook over medium heat....3 mins on each side


oooo crispy goodness!!!


moist...not rubbery....and flavorful!!!


ahhhhhh dinner is served!!!!!!!!!!!!!!!
i topped my burger with lettuce, mustard, 1 tbsp of 1 carb heinz ketchup, grilled peppers and in the last minute i add my sliced onions and soft sauteed onions with just a wee bit of braggs amino for color for about 30 seconds.,,,but check with your own coach before doing the onions. I use 93/7 lean ground beef.

I want to thank you for sharing your recipes, they are amazing! I enjoy reading your thread tremendously, you are so creative.

Curious question: is your weight updated as it shows below your picture? The reason I am asking is that in your picture, you look nothing like someone who weighs over 300 pounds, you really look amazing!

yep thats is the current me...taken a few weeks ago at the theatrical musical annie!!! thank you for saying that though!!....i am, unfortunately, shaped like a pear, so a head shot doesn't look so bad hahaha

Wowee, these recipes look wonderful! I think I'm going to splurge on a magic bullet to make the mayo, plus I could use it for the purees listed in another thread. I LOVE crab cakes, and all the other recipes look awesome, the photos are great! Thanks for taking the time to share with us!

Have you tried making "rice crispy treats" out of the crispy cereal? I was just wondering because I tried one of the vanilla "bars" today that was just like rice crispy treats, but it is restricted. I was thinking there should be a way to make a similar treat out of the crispy cereal so it wouldn't be restricted.

OOOoooooo Myyyyyyy GOODNESS....i am in veggie heaven!!!!!!!!!!

Deep-Dish Rutabaga Fennel Gratin





so in keeping with my try something new each week....
this week i very very reluctantly purchased a big ole fat fennel!!!
Let me first say, i DO NOT LIKE LICORICE!!
and I LOVE GIADA!!! i love watching Giada on the cooking show
and she LOVES fennel...she says it tastes like licorice...
and guess what...she is RIGHT!!!!! i washed and sliced my
lovely fennel...and tasted a nibble....ewww....licorice....black licorice!!

well....maybe it tastes different once cooked???
so off i went to google a recipe...hmmm i have fennel....
some rutabaga....some leeks...what can i find to make???

My inspiration was this...

Here is my recipe:
1/2 Leek sliced
4 Green onions
1/2 Large Rutabaga peeled and thinly sliced
1/2 Large Fennel sliced
2/3 cups veggie shreds (i used 1/3 cheddar and 1/3 mozzarella flavor)
1 packet IP Potato Puree
1 Packet IP Crispy Cereal (dry milk only)
ICBINB spray
1/2 cup chicken broth (i used college inn fat free broth)
1 tbsp vegan soy parmesan cheese
pam olive oil spray
glass baking dish





i started with these 2 packets...



first...separate the crispies in the IP crispy cereal packet from the powdered milk and save the crispies for another use)


mix the IP potato puree in a small bowl with some salt, pepper, 1/3 cup mozzarella veggie shreds, 1/3 cup of veggie shreds cheddar flavor



most coaches DO ALLOW veggie shreds as a portion of your protein...but check with your own coach first.



wash, peel, slice veggies



spray your baking dish with non-stick spray and preheat over to 350.
next layer your veggies!! layer the bottom with the rutabaga slices.



Next add your fennel, green onions and leeks



then top with 1/2 your potato puree and veggie shreds dry mixture



repeat layers





then finish off the top with the rest of the potato puree and veggie shreds mixture and spread it out all evenly.



next, mix 1/2 cup water with the dried milk from the crispy cereal mix and pour 1/2 cup chicken broth
then pour these 2 liquids evenly over the entire gratin.



next, give the entire top a spray of ICBINB spray, add some salt and pepper, and 1 tbsp vegan soy parmesan cheese.

bake for 1 hour on 350 degrees!!!



i served mine with sliced ham....i had thought about adding it into the gratin...but was still unsure about the fennel!! so i didn't...but next time i think i will saute some ham chunks and mix them in all together for a ham gratin!!!

this made 2 servings...2 large servings!!!
let me tell you....it was phenomenal!!!


you could not even taste a licorice taste at all!!!!!!!!!!!!!

Default ALTERNATIVE RECIPE: Italian Calzones and Pizza

Pizza....Pizza......Proti-Diet Pizza....

OOooo YES YOU CAN!!!!



so...trying a few alternatives...and i ordered this from nashua nutrition.



this would be considered a restricted item.



the dough mix and the tomato sauce mix come in their own little bags!!



mixed....it didn't look like much



but i rolled it out between parchment paper...



and made 4 small pizzas!!!!





mixed up the sauce...comes with spices already added!!



spread evenly over pizzas



i added 4 turkey pepperonis i cut into thin strips
and bell peppers



and mozzarella veggie shreds!!!





crispy crunchy pizza!!!!!!


they are the size of the top of the WF jellys!!



WANNA BiTE?????

the next time i tried making...
a lovely wonderful DELICIOUS CALZONE!!!!!




i started with the tomato sauce provided but added a bit of pizazz!!



i added 1 tbsp tomato paste, 1 tsp garlic and 1 tsp chili peppers



then i took 1 small tomato and peeled it, seeded it...


and finely diced it....then squeezed out the
extra juice and added it to the prepared tomato paste



i also added 1 tsp stevia granules



this is a new alternative product...CARBQUIK
that i am trying. this is my first time to use it.



i added 1 TBSP to the dough mix....and an extra tbsp water...
this added approx:
18 calories, 1 gram fat, 2 net carbs and 1 gram protein....
so still ok to use as 1 restricted item.



i rolled it out between parchment paper into a large oval



in the meantime...i sauteed 1 bob evans turkey sausage patty
and 4 turkey pepperonis cut into small pieces



i added some bell peppers and dried shallots



i added my sauce to my dough, then topped it with my meat mixture



then i folded it over using the parchment paper, and crimped
the edges while still in the parchment paper.

then s-L-O-W-L-Y remove the top portion of the parchment paper
and turn it out onto your baking pan
and carefully pull the other side of the parchment paper off.
if the dough starts to stick or tear...
pop into the fridge to get cold and it will peel off easier.



i baked according to the same instructions for pizza
350 degrees for the first 15 mins
then i changed the oven temp to 375 degrees
and baked 9 more mins.



THIS WAS INCREDIBLY DELICIOUS!!!!!



i paired mine with some kale chips to round out my veggie allowance!!

OMG Rainbow, i am moving to Carolina so you can cook for me! Oh wait.....my husband says I can't so I'll just have to try myself. Thank you for the wonderful recipes. Between you and Liz, you gals are really spicing up this diet!
