I know exactly how you feel, I was the same way about 3 weeks into the diet. Couldn't stomache veggies at all. Then I started searching the recipe threads for new ways of cooking them and now I have learned to love veggies. Just push through it you will surprise yourself. Good luck!

I don't know if you like this idea, but i have been doing it as i was getting a little tired of cooked veggies

cut up
onion
celery
peppers
cucumbers
put olive oil and vinegar and sea salt. I find it very refreshing.

I started splitting my veggies up and having some with breakfast added into the omelette. It was helpful to get them in a bit at every meal once I started gagging on them.

I was wondering if we could have veggies other than at lunch and dinner. I'd like to have a rhubarb crumble or crisp for either breakfast or an evening snack.

You need to be having "real" veggies.

Not only for the fiber, nutrients, bulk, etc. but to develop good eating habits that will carry you through maintenance.

I am not a huge veggie person, I am actually allergic to a lot of raw veggies but can eat them when I take allergy medication.. but a limited amount.

I have started liking yellow squash, zucchini, cauliflower and brussel sprouts cooked right! Mostly baked in the oven!

There are many people who blend spinach into the chocolate drink in the mornings and swear that you can't taste it. Also, there are rutabaga fries, zucchini chips and vegetables sprinkled with splenda and cinnamon to taste like fruit (the recipes are in the "stickies", but jicama raw is good that way). Some other recipes to check out might be the packets made into muffins or cookies with shredded zucchini, rutabaga compote made with the oatmeal and many other ways to mask the veggies in a packet. My personal favorites are the purees mixed in with soup. I think with a little research you can find many ways to incorporate veggies without having them by themselves. I have found so much helpful information on this forum!

You are so right about preparing them differently. I don't like steamed broccoli but love love love roasted broccoli. Same for cauliflower and I can't get enough of my rutabaga fries (roasted of course!). It's also been mentioned many times but blending spinach into the drink mix is delicious made as a smoothie with ice. It's so good and you can't taste the spinach at all.

I'm finding cooked much more palatable than raw these days.
I make veggie stir fries, roasted veggies, and veggie purees
Spinach goes in my morning smoothie.
Cauliflower is so versatile (rice, mash, pancakes [search for the thread])
Zucchini works in IP packet cookies or muffins

There are many ways to get veggies in. Avoiding them is not an option on IP. How would one expect to maintain weight loss after IP without learning to eat veggies?

I ate (and still do on maintenance) a lot of cauliflower and mushrooms. I buy the baby bella mushrooms and cook in a little olive oil with some seasoning. I have bought so many mushrooms that the checkout clerk began to question me, wondering what I was doing with all those mushrooms!

I've actually noticed the last week and a half that my digestive system is having a hard time with raw veggies all of a sudden. I even tried cutting out the lettuce (was having my 2 cups of veggies as a salad every day for lunch) but it didn't help. Guess I'm going to have to come up with something else to eat at lunch but raw is so easy. I even tried mixing up the veggies I've been eating raw but it doesn't seem to matter what kind ....darnit. Guess I'll have to start getting my DH to cook up extra veggies the night before for my lunches.

I really like the Cauliflower fried rice and that's 2 cups right there. I also love love love roasting the veggies. I agree with everyone else try preparing them different ways till you find something you really like.
