MMMM - Rhubarb Crumble Pic

  • Just thought I would share the Rhubarb Crumble Pic... Sorry I couldn't figure out how to put the picture in the recipe thread

    4 cups chopped rhubarb
    Sprinkle with 1 package stevia
    Sprinkle with cinnamon
    Add 1 TBSP walden farms strawberry spread

    Mix above ingredients together in a small casserole dish

    Take 1 tsp hard butter, and add to one package IP Maple Oatmeal.
    Crumble with a fork
    Sprinkle overtop of rhubarb mixture

    Bake in oven @ 375 for 40 minutes

    I'm going to have to try it next week when I get the oatmeal packet.

    I have to confess prior to starting this diet I had never heard of rhubarb

    One question, since this is 4 cups of veggies, do you eat it all in one day as your veggies for that day, or can you eat 1/2 one day and 1/2 the following day? Which, I know would mean you would be short half a packet (that you can probably make up for in another way). But yeah, is it ok to keep half in the fridge and eat it the following day?

  • I used a tsp of butter... You could try without but I didn't have the same success with butter spray or no butter.
    I don't use dairy and I made it for a dinner party.
    I had approx 1/4 of a serving so I was willing to have the additional 10 calories that it amounted to
