Spray a non-stick skillet with OV and heat over medium heat. Slice your zucchini thin and place in a single layer in the hot skillet. Spray zucchini with OV to coat the top side and cook until the pan side has little brown spots. Turn the slices over and cook the other side the same. Sometimes I sprinkle with salt and sometime I don't. I eat these hot as they come out of the pan and also cook enough to add to soups and omletes another day. I especially like the fried zucchini in the tomato basil soup. I love fried orka and this taste a lot like that to me without the cornmeal.
Being on an alt plan, i need recipes without IP products. I am not wild about seafood or fish either but willing to try just about anything. I love some of the recipes here but not being able to make the ones using the IP products that sound soooo good is driving me insane!

oh so easy to do... cook ground hamburger, add chili powder, chopped jalapeno, cumin, smoked paprika, and add about 1/2 cup water simmer until all the water is gone. While that is going on, dice onions, tomatoes, peppers. When meat is done, take romane lettuce leaves and use them as a taco shell. I have a recipe in recipes 3 for tomatillo salsa, I also make a taco pizza with the above ingrediences. recipe is in this link somewhere. Hope that helps, next time I make it I will write down the amount of everything I use, and try to get a picture... it is so good and then the left overs can be used for taco salad the next day.

I haven't been able to find decent celery anywhere, bio or otherwise. But I did buy celeriac, celery root, today for the first time. Any suggestion would be very much appreciated.
This is my first post. I've been on IP for just over a week. Doing okay but I like food and really like to cook. So I came here looking for recipes and found some good ones. Thought I would post one of my own creations. I used cauliflower in place of rice. Pretty sure this is good with phase 1. Cauliflower is a bit over but I think that's okay. Serves 1 if you're really hungry.
Ingredients
5 oz pork loin, cut in thin strips or small cubes
1 small green pepper sliced thin
2 or 3 large mushrooms sliced thin
~1c broccoli florets
~4c cauliflower
olive oil
sesame oil
rice vinegar
zero carb soy sauce
1/3 c water
zero msg seasoning of your choice
IP salt and fresh cracked pepper
Shred the cauliflower to a rice-like consistency. I used a grater blade in my processor. Cover in a bowl with plastic wrap and microwave on high for 5-6 minutes. This makes it softer. Then put it in a wok over high heat with just a dash of olive and sesame oils, soy sauce, and seasoning (I use Mrs. Dash). Stir often and fry until some of it starts browning. Set aside on a serving plate and cover.
Get the wok really hot again. Add about 1tb of olive oil and 1tsp sesame oil. Wait just a few seconds and add the pork. Once it's browned well on all sides and add the vinegar, soy sauce, and water to deglaze the pan. Stir it up and add the peppers, mushrooms, and broccoli. Season to taste with s&p and seasoning. Keep stir frying until the pork is done. Careful not to over cook the veggies. They should just get bright green. Serve on top of the cauliflower.

a lot of coaches say it is okay.. never asked mine, heard they weren't very good... I have found ****aki noodles in safeway that are 0/0/0 in the produce section... they weren't bad.
