An update:
I've been having prune juice and fiber one cereal with breakfast every morning, eat a lot more fat instead of carbs, and have been drinking lemon juice in seltzer a couple times a day and I'm doing MUCH better, I think the fat had the biggest impact. Not perfect, as I still rarely feel 'empty' which is always the goal. I still very much have a problem binge eating (thought it was improving, it's not) so it's difficult to calculate exactly how I'd be doing with a regular diet.
I tried to reintroduce liquid stevia again a couple days ago and can now say beyond the shadow of a doubt that is causes constipation. I just added a little bit to coffee and was backed up for the rest of the day, there's hardly anything online about this side effect which surprises me.
I will continue with my current regimen and consider adding some greek yogurt (I don't eat dairy, so this will be a slow introduction if at all) in an effort for 'perfect bowels'.
