I finally broke down and bought a really good (and good looking) food scale. It's amazing how far off I can be when estimating 3 ounces of chicken or an ounce of blue cheese. Plus, it is giving me something else do with food preparation that is fun - OK, I enjoyed chemistry...

I weigh everything. It's just easy once you get used to it. I even figured out what a cup of soy milk weighs and weigh that instead of using wet measurements. If I make soup, I weigh all the ingredients then weigh the final batch. Same with stir fry. It takes maybe an extra 5 minutes during cooking and then I KNOW I'm being as accurate as I possibly can.
