Hi everyone!

I'm going home to be with my mom for Christmas and she and I are hosting Christmas Eve. She wants to make some fatty, fatty chicken casserole... I would love to bring an alternative, healthier idea to the party.... any suggestions? Or good recipe websites to check out? Ideally, we're looking for something that we can prepare ahead of time so we can relax and enjoy "cocktail hour". Maybe something in the crock pot? Or something you can just throw in the oven and let it cook while we socialize with family?
