I'm making King Ranch casserole tonight for dinner and wondered what to use for a side dish. The meal itself includes chicken and corn tortillas, peppers and I'm going to throw in some onion and garlic...maybe even some shredded carrot. I thought about maybe some pinto beans on the side...maybe even some brussels sprouts - but the sprouts don't "go" with the tex-mex meal.
My husband's very first words will be "Where are the potatoes!?" I don't think it needs anything starchy....
Any thoughts or ideas?
