How to cook a split turkey breast?
 
HI. I purchased a split turkey breast today, so it's actually 1/2 a breast. It weighs 2.49 pounds. I haven't a clue as to how to cook this thing. How long? What temperature? What method? Or what spices.

Does anybody have any ideas. I'd like to make it for dinner tomorrow night.
Any suggestions would be appreciated. Thank you.

Bone in or boneless?

For bone-in, I normally rinse and pat dry, then separate the skin and meat with my hands and pack some sprigs of rosemary, some sage, and smashed garlic cloves in. Then I spray the outside of the skin with "I can't believe its not butter" spray, sprinkle with salt and pepper and any other seasonings that sound good (ground sage, paprika, etc), and roast at 375 degrees until cooked through (I think this takes about an hour). Mmmm. I can't Believe its Not Butter makes it so moist! Roast in a roasting pan on a rack so the fat can run off.

If the piece is boneless/skinless, it'll have a tendency to dry out in the oven. If this is the case, I usually baste with some fat free chicken stock, and baste often. Sometimes I'll make a basting liquid with a little more flavor (adding some chipotle tabasco is yummy, or simmering the broth before you start cooking the breast with some seasonings (garlic, rosemary, etc) to infuse some flavor into it.

It's bone in. I don't have any rosemary or sage, but the garlic sounds good.

The oven roasting bags work well for turkey breasts. I usually marinate the turkey breast in a cup of sake. Then season with black pepper, and throw some celery sticks, a bunch of cilantro, and a few sprigs of fresh rosemary in the bag and with the breast. Pour the marinade in the bag too.

A friend of mine takes a split turkey breast on the bone, places it in her crock pot with a can of chicken broth and seasons it to her taste. She says it is hmm, hmm good. I want to try it myself. I have no ideal how long she cooks it for though.
