Default Peach Oatmeal Pancakes.

I was messing around in the kitchen again after talking to a friend of mine about different breakfast ideas. I put this together this morning and it was really good.

1 small can diced peaches diced (50 cal version) I pureed these in a blinder. ( I should have just used a fresh peach, but lol you use what you have in house)

1/2 cup eggbeaters
1/4 cup 1% milk
1 tsp baking powder
1 tablespoon flour
2 packets instant oat meal
1 tbsp Cinnamon
1 tbsp imitation vanilla extract

Add all ingredients together in a bowl. I heated mine in the microwave for 30 seconds to have the oatmeal absorb some of the liquid and thicken up.

I then made 3 good sized pancakes and cooked them golden brown. The recipe will make 6 pancakes or 2 servings. The calories listed below are for 1 serving.

I put 1/4 cup of sugar free syrup and some smart squeeze on these, added a cup of cut strawberries on the side with a 1/2 cup of milk. I had a super breakfast for 315 calories!!!

Now, I kind of made this up on the fly - so use at your own risk - but I thought they were fantastic. If anyone plays around with this and improves the recipe, please let me know!

What size were the instant oatmeal packets? I've noticed that the amount of oatmeal in the instant packets varies by brand. These pancakes sound good and I want to make sure I use the right amount of oatmeal in the recipe.

I used quaker instant oatmeal - 100 calories per packet. Not sure the grams.

Thanks, I can figure it out from that info (or just buy the Quaker instant oatmeal packets). Hmmm, maybe we'll have pancakes next weekend!

A good recipe for alternative pancakes is cottage cheese pancakes. I haven't made them in a while but they are pretty good When I make them, I don't add any sweeteners.

cottage cheese pancakes

2-3 beaten eggs
1 cup cottage cheese
Honey or a couple of teaspoons of sugar, to taste (a banana will make it naturally sweeter)
1 cup uncooked oatmeal

Optional, highly recommended ingredients:
banana
a sprinkle of cinnamon
a splash of vanilla

Grab your handy blender and dump the ingredients in, in the order they appear (otherwise the mixture will get all chunky). So, eggs in first, then start the blender. As it's blending, pour in the cottage cheese, then the banana if you're using it, then whatever sweeteners and spices you like, then the oatmeal. Once this is nicely blended, cook as you would pancakes, in a nonstick pan over medium-low heat. I love these plain or with fruit, but you can put syrup on them too, just like regular pancakes.

My version of the Protein-Fruit Pancake:

4 egg whites
1/4 c. oatmeal flakes
1/4 c. fiber one cereal
1/3 c. cottage cheese
vanilla, cinnamon

Wing it around in a blender until batterish, then pour into a preheated non-stick sprayed skillet. I sprinkle about 1/2 diced apple or the equivalent other fruit on it while it is cooking. Cook 5 minutes at medium temp, flip, cook. Sometimes I add 1/2 c. pumpkin puree to the blender and about 2 tbs. water and pumpkin pie spices. SF syrup if you aren't adverse to artificial sweeteners.

Fruits that work well cooked in: peaches, apples, pears, pitted cherries (frozen), blueberries.

Fruits that are better sliced on top after cooking: mandarin oranges, strawberries, bananas, melon....

Mel, I tried your version, only I used egg beaters in place of the egg whites and I love it!

I double the recipe and make one for hubby and one for me!
