I’m taking this to a Cinco de Mayo pot luck tonight. It kind of has a lot of steps, but it’s nothing difficult and is consistently tasty! I usually make it with sweet potatoes instead of the russets. They give the soup a happy orange color and sweet taste, nicely compliments the corn. I usually use frozen kernels instead of fresh corn.
Give it a try, you won’t be sorry I promise!
