Iím taking this to a Cinco de Mayo pot luck tonight. It kind of has a lot of steps, but itís nothing difficult and is consistently tasty! I usually make it with sweet potatoes instead of the russets. They give the soup a happy orange color and sweet taste, nicely compliments the corn. I usually use frozen kernels instead of fresh corn.
Give it a try, you wonít be sorry I promise!

Shannon, I love corn chowder, and this recipe looks awesome - plus I have everything, including the sweet potatoes! I went to Amazon to look at the book and read all the reviews (well, skimmed them ) and ordered a copy of my library. Thanks.
