Hie I'm new here...looking for low calorie tasty vegetable dishes
Hi everyone.... I'm new here...I'm Venezuelan....right now I was looking for low calorie tasty vegetable dishes...I mean cooked vegetable di shes because I like my veggies cooked..not raw....so if you can help me with some ideas I would really appreciate it....
can of garbanzo beans rinsed and drained
2 roasted red peppers (from a jar) drained
2 Tb mint or parsley or combination
1 tb plain non-fat yogurt
salt and pepper
2 Tb grated parmasan cheese
1/8 tsp of cayenne pepper
All into a food processor and whiz to a fine consistency and form patties to saute gently in 1 Tb of canola oil till golden turn once. drain on paper towels and keep warm.
Sauce:
plain non-fat yogurt
1 cucumber peeled, seeded and diced
1 tomatoe peeled, seeded and diced
2 green onions minced
salt and pepper
mix together and chill one hour
whole wheat pita bread...or w w rolls...or multigrain bread
cut one inch from top of pita bread and stuff with 1/4 cup sauce and one large or two medium patties...may also add lettuce or shredded cabbage
Makes a great lunch with a nice salad or some fruit
I had a cup of broth and fruit after...a red pear
